When I was on internship I had the best roast beef that I have ever eaten. Carl always brought a roast for his contribution to any pot-luck. I learned to line up quickly (I’m often at the start of a food line – but that’s another story) and make sure I got some of Carl’s roast. I finally asked him for his “secret” recipe … What spices do you use? … None What liquid do you marinate the roast in?…None. ………. Then how do you get it to taste so great?
Here’s the recipe. Get your slow cooker out 24 hours ahead of time. Put roast in slow cooker. Turn the slow cooker to low. Slow cook for 24 hours … no salt or pepper or any spice … no liquid … it will make its own.
Tonight we ate “Carl’s Roast Beef” … and the flavour was incredible.
I woke up this morning to the wonderful smell of the roast cooking. By 11:00 a.m. I was starving because supper smelled so good.
